Corn Casserole

This recipe is absolutely one of my favorites! It’s the kind of thing I get cravings for. And when I want it, I want it NOW! It’s something my aunt-who’s-really-my-second-cousin (we all have those, admit it. 😛 ) makes when we go up for a visit to Nebraska. It’s just Aunt Rhonda’s thing. I can’t tell you how many times I begged her to make it. I was thrilled when we managed to get the recipe. It’s so good that everybody should have it!

Aunt Rhonda’s Corn Casserole

1 can whole kernel corn (not drained)
1 can cream corn
1/2 cup butter (melted)
1 cup Velveeta (health food nuts, don’t ruin it by using “healthy” cheese!)
1 cup uncooked macaroni (don’t use a different type of noodle, it doesn’t always cook right.)
1 tsp. onion flakes
Salt and pepper to taste

Combine all ingredients. Bake uncovered at 325 degrees for one hour, stirring once after baking 30 minutes.

    Sounds very yummy. Unfortunately, in a home full of diary intolerant people, I’m afraid Mum would probably find a way to ruin it. Cheap cheese would be a blessing………….COMPARED TO TOFU!! 😀
